- 1/3 cup full-fat plain Greek yogurt
- 1/4 cup extra virgin olive oil
- 1 1/2 pounds boneless skinless chicken breasts or thighs, cubed
- 6 garlic cloves, chopped
- 2 shallots, chopped
- 1 tablespoon smoked paprika
- 1 tablespoon fresh oregano, chopped
- Chili flakes, Kosher salt, and black pepper (to taste)
- 2 Persian cucumbers, chopped
- 1 avocado, diced
- 2 tablespoons lemon juice
- 1/4 cup fresh dill, chopped
- 6 ounces crumbled feta cheese
- 1β2 cups tzatziki sauce
- Lettuce, peperoncini, onion, tomatoes, and pitas for serving
- 1/2 cup tahini
- 2 teaspoons grated ginger
- 1 clove garlic, grated
- 2 teaspoons tamari
- 1 tablespoon lemon juice
- 2 teaspoons honey
Instructions
- In a large bowl, combine Greek yogurt, olive oil, cubed chicken, garlic, shallots, smoked paprika, oregano, chili flakes, salt, and pepper. Mix well until all ingredients are coated. Allow the chicken to marinate for at least 15 minutes at room temperature or overnight in the refrigerator for best results.
- Preheat the oven to 425Β°F. Arrange the marinated chicken on a baking sheet evenly spaced apart. Bake for 15 minutes. Toss the chicken pieces and bake for another 5β10 minutes until fully cooked. For extra flavor, broil for 1β2 minutes to achieve a charred finish.
- While the chicken cooks, in a separate bowl, combine chopped cucumbers, diced avocado, lemon juice, dill, salt, and pepper. Mix gently until combined. Set aside.
- In a blender, combine tahini, grated ginger, grated garlic clove, tamari sauce, lemon juice, honey, and water. Blend until smooth. Adjust consistency by adding more water if needed. Season with salt to taste.
- Start with a base of fresh lettuce in each bowl. Top with baked chicken pieces followed by cucumber avocado salad. Add crumbled feta cheese and dollops of tzatziki sauce. Finish with a drizzle of ginger tahini sauce along with your choice of fresh veggies like tomatoes and onions.
