  • 120ml (Β½ cup) water (for syrup)
  • 1 cinnamon stick (for syrup)
  • 5ml (1 teaspoon) lemon juice (for syrup)

Instructions

  1. Preheat oven to 175Β°C (350Β°F). Grease a 9-inch round cake pan.
  2. In one bowl, whisk together ground almonds, flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat together sugar, eggs, and olive oil until smooth. Stir in orange juice, zest, and vanilla extract.
  4. Gradually fold dry ingredients into wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. For the syrup, simmer together sugar, water, cinnamon stick, and lemon juice for about 5-7 minutes until dissolved.
  7. Once the cake has cooled slightly in the pan for about 10 minutes, pour warm syrup over it to soak in.
