  • ΒΌ cup grated Parmesan cheese
  • 1Β½ to 2 lbs boneless, skinless chicken breasts or thighs

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey (if using), minced garlic, Italian seasoning, smoked paprika, salt, black pepper, and grated Parmesan cheese.
  2. Add chicken to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat grill to medium-high and lightly oil the grates.
  4. Remove chicken from the marinade; discard any excess marinade. Grill each piece for about 5–7 minutes per side until the internal temperature reaches 165Β°F (75Β°C).
  5. In the last minute of grilling, sprinkle additional Parmesan on top of each piece and close the lid briefly to melt.
  6. Remove from the grill and let rest for 5 minutes before serving.
