  • 4 flour tortillas (8-inch size)
  • 2 cups fresh spinach, roughly chopped
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano or basil, chopped (optional)
  • 1 tablespoon olive oil, extra virgin recommended
  • 1 clove garlic, minced
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing and chopping the spinach, halving the cherry tomatoes, dicing the red onion, mincing the garlic, chopping the herbs, crumbling the feta cheese, and shredding the mozzarella.
  2. In a medium bowl, mix together spinach, cherry tomatoes, red onion, garlic, herbs, feta cheese, mozzarella cheese, lemon juice, and a pinch of black pepper until well combined.
  3. Heat a non-stick skillet over medium heat with about 1 teaspoon of olive oil until shimmering.
  4. Place one tortilla on a clean surface and spoon approximately 3/4 cup of filling onto half of it. Fold the tortilla to form a half-moon shape and press gently to compact. Repeat with remaining tortillas.
  5. Cook each folded quesadilla in the skillet for 4-5 minutes per side until golden brown and crispy.
