Ingredients
- 2 medium oranges (about 400 g), boiled and pureed
- 150 g almond meal
- 100 g shelled pistachios, finely ground
- 6 large eggs
- 200 g granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
Instructions
- Preheat your oven to 170ยฐC (340ยฐF). Line a 23 cm (9 inch) springform pan with parchment paper and lightly grease the sides.
- Place the whole oranges in a pot, cover them with water, and simmer gently for 60 minutes. Once cooked, drain, cool, and puree until smooth.
- In a large bowl, whisk together eggs and sugar until pale. Stir in orange puree.
- In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Gently fold this dry mix into the wet ingredients until just combined.
- Pour the batter into your prepared pan and smooth out the top. Bake for 50 to 60 minutes until set; tent with foil if browning too quickly.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
