Instructions
- Rinse the long-grain rice in a fine mesh strainer under cold water until the water runs clear.
- In a saucepan, heat the vegetable or chicken broth over medium heat until it simmers.
- In a large pot, heat olive oil over medium heat and sauté the minced garlic for about 1-2 minutes until fragrant.
- Add the rinsed rice to the pot and sauté for another 2-3 minutes, stirring constantly.
- Carefully pour in the hot broth along with lemon juice, lemon zest, oregano, salt, and black pepper. Stir well to combine.
- Bring to a boil, then reduce heat to low and cover the pot. Let it simmer for about 15-18 minutes or until all liquid is absorbed.
