- 240 g cream cheese or mascarpone
- 225 g butter
- 1 egg yolk
- 260 g flour
- 70 g powdered sugar
- 40 g cocoa powder
- 1 L milk
- 3 large eggs
- 100 g cornstarch
- 150 g brown sugar
- 100 g butter (for filling)
- 170 g heavy cream
- 200 g praliné paste
- 200 g roasted hazelnuts
- 50 g milk chocolate (for ganache)
- 50 g liquid cream (for ganache)
Instructions
- For the crust, combine flour, cocoa powder, salt, powdered sugar, cold butter, and cream cheese in a bowl. Add the egg yolk and mix until smooth. Refrigerate for 30 minutes.
- Preheat the oven to 180°C (350°F). Roll out the dough and line a tart pan with it. Bake for about 35 minutes until firm.
- For the filling, whisk together eggs, brown sugar, and cornstarch in a bowl. Heat milk gently without boiling and gradually mix into the egg mixture. Return to heat until thickened.
- Remove from heat and stir in butter, heavy cream, and praliné paste until smooth.
- Pour the filling into the cooled crust and bake at the same temperature for around 45 minutes to an hour until set.
- Make caramelized hazelnuts by cooking sugar and water until caramelized; add hazelnuts to coat.
- Prepare ganache by heating cream and melting chocolate together until smooth.
- Once cooled, pour ganache over flan and top with caramelized hazelnuts.
