  • 1 medium spring onion (20 grams)
  • Β½ cup grated Gruyere cheese (40 grams)
  • Zest of Β½ lemon
  • Β½ teaspoon garlic powder
  • 1 tablespoon chopped parsley
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 200Β°C (390Β°F).
  2. Wash zucchinis, cut in half lengthwise, and scoop out the flesh.
  3. In a mixing bowl, combine feta, Greek yogurt, spring onion, Gruyere cheese, lemon zest, garlic powder, parsley, olive oil, and oregano; mix well.
  4. Generously fill each zucchini half with the mixture.
  5. Drizzle olive oil over the tops and sprinkle additional oregano if desired.
