Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt. In another bowl, beat eggs and sugar until fluffy; add pumpkin and vanilla.
  3. Gradually mix dry ingredients into the wet mixture until combined.
  4. Spread batter onto the baking sheet evenly and bake for about 15 minutes or until a toothpick comes out clean.
  5. While hot, dust a kitchen towel with powdered sugar, invert the cake onto it, and roll it up gently; let cool completely.
