  • 1/4 cup heavy whipping cream
  • 3 1/2 ounces bittersweet or dark chocolate
  • 2 teaspoons light corn syrup
  • 2 tablespoons very warm water

Instructions

  1. Preheat oven to 350ยฐF. Combine graham crackers, melted butter, and sugar; press into tart pan and bake for 10 minutes. Cool completely.
  2. In a bowl, bloom vegan gelatin in cold water for 5 minutes; microwave until dissolved.
  3. Melt white chocolate; mix with warm milk, bloomed gelatin, and peppermint oil until smooth.
  4. Whip cream with powdered sugar to medium-stiff peaks; gently fold into the chocolate mixture.
  5. Spoon mousse into cooled crust and refrigerate until set (at least a few hours).
  6. Prepare glaze by heating cream and mixing in chopped chocolate, corn syrup, and warm water until smooth.
  7. Pour glaze over chilled mousse; let set at room temperature before serving.
