  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb chicken or turkey sausage (sliced into rounds)
  • 1/2 cup butter
  • 1 tablespoon Cajun seasoning (divided)
  • 1/2 teaspoon pepper

Instructions

  1. In a large crock pot, layer halved potatoes. Sprinkle with pepper and half of the Cajun seasoning.
  2. Place the stick of butter on top of the seasoned potatoes.
  3. Add trimmed green beans and diced onion over the potatoes, then sprinkle with remaining Cajun seasoning.
  4. Top with sliced chicken or turkey sausage.
  5. Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once each hour to mix flavors.
  6. Taste before serving and adjust seasoning if needed.
