  • 2 1/4 cups whole milk
  • 6 egg yolks
  • 1 cup + 2 tbsp granulated sugar
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 cup unsalted butter, softened
  • 1 egg

Instructions

  1. Prepare the pastry cream by simmering whole milk with half of the sugar. In another bowl, whisk egg yolks with remaining sugar, salt, vanilla bean paste, and cornstarch. Temper the eggs with hot milk, return to heat until thickened, then stir in butter and cool.
  2. Make the cookie dough by creaming softened butter and sugar. Add egg and vanilla bean paste. Mix dry ingredients separately before combining everything.
  3. Preheat oven to 350°F (175°C). Shape dough into balls, create indents for pastry cream, fill them, roll in sugar, and bake for about 9 minutes.
  4. Once out of the oven, sprinkle more sugar on top and use a kitchen torch to caramelize.
