  • 2 tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • Β½ tsp salt
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1Β½ cups whole milk
  • Β½ cup chicken broth
  • Β½ tsp garlic powder
  • ΒΌ tsp dried thyme
  • Β½ cup shredded cheddar cheese
  • Β½ cup grated Parmesan cheese
  • Fresh parsley (chopped)

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken for about 6-7 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, add rice and stir to coat. Pour in chicken broth and salt; bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until rice is tender.
  3. For the creamy sauce, melt butter in a saucepan over medium heat. Whisk in flour until smooth; gradually add milk and broth while whisking continuously until thickened. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  4. Return cooked chicken to the skillet with rice and pour the creamy sauce over everything. Stir gently to combine and let it simmer for another 5 minutes.
  5. Garnish with chopped parsley before serving.
