  • 150 ml white apple vinegar (or water)
  • 250 ml cream
  • 250 ml water (or vegetable stock)
  • 125 g baby spinach
  • 280 g jar marinated artichokes (drained)
  • 4 tbsp basil pesto
  • 200 g gouda cheese (grated)

Instructions

  1. Preheat oven to 180°C (356°F).
  2. In a cast-iron skillet or stainless steel pan, heat olive oil over medium heat. Sauté diced onion and minced garlic until translucent.
  3. Stir in dried oregano and basil, cooking for an additional minute.
  4. Add gnocchi and cook until lightly golden, about 3–5 minutes.
  5. Deglaze the pan with white apple vinegar or water. Scrape up browned bits and add cream and water (or stock). Simmer for about 5 minutes.
  6. Mix in basil pesto, baby spinach, and marinated artichokes until the spinach wilts. Top with grated gouda cheese.
  7. Bake in preheated oven for 15–20 minutes until cheese is melted and golden brown.
