  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup Velveeta cheese (cubed)
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup reserved pasta water, if needed
  • 1 tablespoon chopped parsley, optional

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter. Sear chicken until golden brown and cooked through; transfer to a plate.
  3. Cook rotini in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  4. In the same skillet, melt remaining butter and sautรฉ minced garlic. Add heavy cream and bring to a gentle simmer.
  5. Stir in Velveeta until melted; then add mozzarella and Parmesan until the sauce is thick.
  6. Toss cooked rotini into the sauce until well coated.
