  • 150 g granulated sugar (for jam)
  • 150 g water
  • 380 g all-purpose flour
  • 100 g almond flour
  • 1/2 teaspoon salt
  • 230 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g dried cranberries (finely chopped)
  • Powdered sugar (for dusting)

Instructions

  1. In a medium saucepan, combine the fresh or frozen cranberries, granulated sugar, and water. Cook over medium heat until the mixture comes to a boil.
  2. Reduce heat to low and simmer until the cranberries burst and the mixture thickens (about 15-20 minutes). Allow it to cool completely before using.
  3. In a large mixing bowl, cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in both eggs one at a time, followed by vanilla extract; mix well.
  5. In another bowl, whisk together all-purpose flour, almond flour, salt, and finely chopped dried cranberries.
  6. Gradually mix dry ingredients into the wet mixture until combined.
  7. Divide dough into two equal portions; wrap each portion in plastic wrap. Refrigerate for at least 30 minutes to firm up.
  8. Preheat your oven to 350ยฐF (175ยฐC). On a floured surface, roll out one portion of dough to about 1/8 inch thick.
  9. Use cookie cutters to cut out shapes from the rolled dough. Place cutouts on parchment-lined baking sheets about an inch apart.
  10. Bake in preheated oven for 10-12 minutes or until lightly golden around the edges. Let cookies cool on baking sheets for a few minutes before transferring them to wire racks.
  11. Once cookies are completely cooled, spread cranberry jam on half of them. Top with remaining cookies to create sandwiches.
  12. Dust with powdered sugar before serving.
