  • 3 tablespoons lime juice

Instructions

  1. Sautรฉ ginger and garlic in coconut oil over medium heat until fragrant.
  2. Add red curry paste, then stir in vegetable broth, maple syrup, lemongrass, and soy sauce. Bring to a boil and simmer for 10 minutes.
  3. Incorporate shiitake mushrooms, coconut milk, and tofu cubes; simmer gently for 3 more minutes.
  4. Stir in lime juice before removing from heat; discard lemongrass stalks.
