Ingredients

- Salt & freshly ground black pepper
- 2 tbsp vegetable oil
- 1 large yellow onion, thinly sliced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red or yellow curry paste
- 1 tsp ground turmeric
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup beef broth or water
- 1 tbsp brown sugar
- Juice of lime
- 1 cup jasmine rice
- 4 garlic naan, warmed
Instructions
- Season the beef with salt and pepper. In a large pot or Dutch oven, heat vegetable oil over medium-high heat.
- Sear the beef in batches until browned on all sides (approximately 4-5 minutes). Remove and set aside.
- In the same pot, add onions, garlic, and ginger; cook until onions are translucent (about 3-4 minutes). Stir in curry paste and turmeric; cook for another minute.
- Return seared beef to the pot with coconut milk, broth (or water), brown sugar, and lime juice. Bring to a gentle simmer, partially cover the pot, and let braise on low heat for 1.5 to 2 hours until tender.
- Meanwhile, rinse jasmine rice under cold water until clear. Cook according to package instructions until fluffy.
