  • 3 medium beets (peeled and grated)
  • 3 medium Yukon potatoes (peeled and sliced)
  • 2 carrots (peeled and sliced)
  • 2 celery ribs (chopped)
  • 1 medium onion (chopped)
  • 8 cups chicken broth
  • 4 tablespoons olive oil
  • 1 can white cannellini beans (with juice)
  • 23 tablespoons white vinegar
  • Fresh dill (chopped)

Instructions

  1. Prepare all vegetables by peeling, grating, and chopping as indicated.
  2. In a large pot over medium-high heat, add 2 tablespoons of olive oil and sauté grated beets for about 10 minutes.
  3. Pour in chicken broth and water; add potatoes and carrots. Cook until tender, about 10–15 minutes.
  4. In a skillet, heat remaining olive oil; sauté onion, celery, and optional bell pepper until golden. Stir in ketchup or tomato sauce before adding to the soup pot.
  5. Add cannellini beans, bay leaves, vinegar, salt, pepper, garlic, and dill to the pot. Simmer for an additional 2–3 minutes before serving.
