- 3 medium beets (peeled and grated)
- 3 medium Yukon potatoes (peeled and sliced)
- 2 carrots (peeled and sliced)
- 2 celery ribs (chopped)
- 1 medium onion (chopped)
- 8 cups chicken broth
- 4 tablespoons olive oil
- 1 can white cannellini beans (with juice)
- 2–3 tablespoons white vinegar
- Fresh dill (chopped)
Instructions
- Prepare all vegetables by peeling, grating, and chopping as indicated.
- In a large pot over medium-high heat, add 2 tablespoons of olive oil and sauté grated beets for about 10 minutes.
- Pour in chicken broth and water; add potatoes and carrots. Cook until tender, about 10–15 minutes.
- In a skillet, heat remaining olive oil; sauté onion, celery, and optional bell pepper until golden. Stir in ketchup or tomato sauce before adding to the soup pot.
- Add cannellini beans, bay leaves, vinegar, salt, pepper, garlic, and dill to the pot. Simmer for an additional 2–3 minutes before serving.
