  • 55 g light brown sugar
  • 65 g granulated sugar
  • 1 tsp vanilla extract
  • 65 g plain flour (all-purpose)
  • 15 g cocoa powder
  • 1 tsp baking powder
  • Β½ tsp espresso powder
  • ΒΌ tsp salt
  • 75 g Dark Chocolate 75% (melted)
  • 2ΒΌ tsp powdered Vegan vegan gelatin
  • 45 ml fresh lemon juice
  • 400 g fresh raspberries
  • 100 g granulated sugar
  • 480 ml double cream (heavy cream) (cold)
  • 125 g fresh raspberries
  • 50 g Dark Chocolate shavings

Instructions

  1. Preheat oven to 180Β°C (350Β°F). Grease and line a 9-inch round cake pan.
  2. Whisk eggs, light brown sugar, granulated sugar, and vanilla until fluffy. Sift together flour, cocoa powder, baking powder, espresso powder, and salt; fold into the egg mixture. Add melted dark chocolate and mix until smooth.
  3. Pour batter into the pan and bake for 20 minutes or until a toothpick comes out clean.
  4. For the mousse, combine vegan gelatin with lemon juice to bloom. Blend raspberries and sugar until smooth; strain if desired. Whip cold heavy cream until soft peaks form and fold in raspberry puree. Warm bloomed gelatin until dissolved and fold into the mousse mixture.
  5. Once cooled, layer the raspberry mousse over the chocolate sponge in the pan and refrigerate for at least 4 hours or until set.
  6. Garnish with fresh raspberries and dark chocolate shavings before serving.
