Instructions
- Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until well combined.
- Add in eggs, whole milk, vegetable oil, and vanilla extract. Mix until smooth.
- Slowly stir in hot coffee. The batter will be thin.
- Divide the batter evenly among the prepared pans.
- Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely before assembling.
- In a saucepan, whisk together sugar, cornstarch, and egg yolks.
- Gradually whisk in the orange juice.
- Cook over medium heat while stirring constantly until thickened.
- Remove from heat and stir in zest and butter. Let it cool completely.
- Heat heavy cream in a saucepan until steaming but not boiling.
- Pour it over chopped dark chocolate in a mixing bowl. Let sit for about 2 minutes before stirring until smooth.
- Add butter to achieve a glossy finish and let cool slightly before pouring.
- Place one layer of cake on a serving plate and spread an even layer of orange filling on top.
- Repeat with another layer of cake and more filling; then place the third layer on top.
- Pour ganache over the assembled cake, allowing it to drip down the sides.
