- 2β3 tbsp milk (dairy or non-dairy)
- 1/4 cup mini chocolate chips
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 1 tsp coconut oil (for melting chocolate)
Instructions
- In a medium bowl, whisk together the almond flour, protein powder, and salt.
- In another bowl, mix cashew butter with milk, honey or maple syrup, and vanilla extract until smooth.
- Combine wet and dry mixtures until well mixed.
- Fold in mini chocolate chips gently.
- Roll the mixture into 1-inch balls and place on parchment-lined plate.
- Chill for at least 30 minutes to firm up.
- Melt remaining chocolate chips with coconut oil in the microwave; dip chilled balls into chocolate and sprinkle with extra mini chocolate chips.
- Refrigerate again until set.
