  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 2–3 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tsp coconut oil (for melting chocolate)

Instructions

  1. In a medium bowl, whisk together the almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter with milk, honey or maple syrup, and vanilla extract until smooth.
  3. Combine wet and dry mixtures until well mixed.
  4. Fold in mini chocolate chips gently.
  5. Roll the mixture into 1-inch balls and place on parchment-lined plate.
  6. Chill for at least 30 minutes to firm up.
  7. Melt remaining chocolate chips with coconut oil in the microwave; dip chilled balls into chocolate and sprinkle with extra mini chocolate chips.
