Instructions
- Marinate the chicken: Combine half of the lime juice, oil, jalapeno, honey, and spices in a Ziplock bag. Add the chicken, seal, and ensure it's coated. Marinate for at least 30 minutes or up to 24 hours.
- Cook the chicken: Heat a non-stick skillet over medium-high heat; cook chicken for about 10-13 minutes until fully cooked (internal temp of 160°F). Let rest before slicing.
- Prepare the filling: In a clean skillet, heat olive oil and sauté red onion until translucent. Add corn and black beans; cook for an additional few minutes.
