  • 1 cup cooked brown rice

Instructions

  2. In the same skillet, add the chopped zucchini, broccoli florets, red bell pepper, and onion. Stir-fry for about 5–7 minutes until tender-crisp.
  3. Return the cooked chicken to the skillet along with soy sauce and garlic powder. Mix well to combine flavors.
  4. Warm the cooked brown rice separately in a pot or microwave; fluff with a fork before serving.
  5. Serve a generous portion of stir-fried chicken and veggies over the brown rice.
