Description

Celery Salad with Greek Yogurt Dressing is a delightful and refreshing dish that perfectly balances crisp vegetables and creamy flavors. This salad features crunchy celery, slivered almonds, and a rich Greek yogurt dressing infused with garlic and zesty lemon juice. It’s not only quick to prepare—taking just about 10 minutes—but also versatile enough to serve as a side at summer barbecues or as a light meal on its own. The addition of fresh herbs like mint elevates the taste, making it an ideal choice for those seeking nutritious and vibrant salads.

Ingredients

Scale
  • 3 large garlic cloves
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon Aleppo pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup slivered almonds
  • 1 bunch celery (10 to 12 stalks)
  • 3 scallions (thinly sliced)
  • 1/3 cup chopped fresh mint leaves

Instructions

  1. For the dressing, mince garlic cloves, mash into a paste, then mix with Greek yogurt, lemon juice, olive oil, Aleppo pepper, salt, and black pepper in a medium bowl until well combined.
  2. In a small dry skillet over medium heat, toast slivered almonds for about 2 to 4 minutes until golden brown; set aside to cool.
  3. In the bowl of dressing, add thinly sliced celery stalks, scallions, and chopped mint; mix in all but two tablespoons of toasted almonds. Stir gently to coat.
  4. Garnish with reserved almonds and additional mint before serving.
