  • Β½ cup fresh cilantro, chopped
  • Β½ cup tahini
  • 2-inch piece fresh ginger (grated)
  • ΒΌ cup lemon juice
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 clove garlic (minced)
  • sea salt & black pepper to taste

Instructions

  1. In a bowl, mix tahini, ginger, lemon juice, olive oil, maple syrup, and garlic until well combined.
  2. Adjust the dressing consistency by adding cold water gradually until desired thickness is reached.
  3. Mash one-third of the chickpeas in a large bowl; then add grated carrots, onion, celery, and cilantro.
  4. Pour the dressing over the salad mixture and fold gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
