  • ยฝ teaspoon dried thyme
  • 1 bay leaf
  • 6 cups (1.5 l) low sodium vegetable broth
  • 1 to 1 ยฝ teaspoon fine salt, to taste
  • โ…› teaspoon black pepper
  • ยฝ teaspoon onion powder
  • 1 tablespoon lemon juice, or to taste
  • 3 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sautรฉ until soft, about 5 minutes.
  2. Stir in minced garlic, paprika, and cumin. Cook for another minute until fragrant.
  3. Add sliced carrots, lentils, tomato paste, dried thyme, bay leaf, vegetable broth, salt, and black pepper. Bring to a boil.
  4. Reduce heat to low and simmer for 25 to 30 minutes until lentils are tender.
  5. Stir in lemon juice and onion powder; adjust seasoning if necessary.
  6. For creaminess, blend part of the soup until smooth and return it to the pot.
  7. Serve hot with chopped parsley on top.
