  • 1 whole egg (whisked)

  • 3 cups fresh strawberries (hulled and quartered)
  • ΒΌ cup granulated sugar
  • ΒΌ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Melt the cold unsalted butter in a saucepan over medium heat until golden brown; let cool slightly.
  2. In a mixing bowl, combine flour and salt; add cooled brown butter.
  3. Stir in water and vinegar, then mix with a whisked egg to form dough. Wrap in plastic wrap and refrigerate for at least one hour.
  4. In another bowl, mix peaches, strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt until combined.
  5. Preheat oven to 375Β°F (190Β°C). Roll out half of the chilled dough into a circle large enough for your pie dish.
  6. Place rolled dough in the pie dish and fill with fruit mixture. Roll out remaining dough for top crust or create a lattice design.
  7. Bake for about 70 minutes or until golden brown and bubbly.
