- 8 tablespoons unsalted butter (cut into cubes and chilled)
- 1 large egg yolk
- 1 tablespoon heavy cream
- ½ teaspoon pure vanilla extract
- ¼ cup lemon zest + ½ cup juice (from 4 lemons)
- 1 large egg + 5 large yolks
- ⅓ cup honey
- Kosher salt
- 4 tablespoons unsalted butter (cut into 4 pieces and chilled)
- 2 tablespoons heavy cream
- 10 ounces (2 cups) blueberries
- 2 tablespoons cornstarch
- ¼ cup honey
Instructions
- Preheat your oven to 350°F (175°C). Prepare the tart crust by mixing flour, confectioners' sugar, and salt in a bowl. Cut in chilled butter until crumbly. Stir in egg yolk, heavy cream, and vanilla extract until dough forms.
- Press the dough into a 9-inch tart pan and chill for 30 minutes. Bake for 20-25 minutes until set.
- For the lemon curd, combine lemon juice, zest, honey, eggs, and yolks in a saucepan over medium heat. Cook while stirring until thickened; strain to remove lumps.
- Pour the lemon curd into the cooled crust and bake for another 20-25 minutes.
- For the blueberry topping, cook blueberries with honey and cornstarch until thickened. Once the tart has cooled slightly, pour the blueberry mixture on top.
