  • ½ teaspoon pure vanilla extract
  • ¼ cup lemon zest + ½ cup juice (from 4 lemons)
  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • Kosher salt
  • 4 tablespoons unsalted butter (cut into 4 pieces and chilled)
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the tart crust by mixing flour, confectioners' sugar, and salt in a bowl. Cut in chilled butter until crumbly. Stir in egg yolk, heavy cream, and vanilla extract until dough forms.
  2. Press the dough into a 9-inch tart pan and chill for 30 minutes. Bake for 20-25 minutes until set.
  3. For the lemon curd, combine lemon juice, zest, honey, eggs, and yolks in a saucepan over medium heat. Cook while stirring until thickened; strain to remove lumps.
  4. Pour the lemon curd into the cooled crust and bake for another 20-25 minutes.
  5. For the blueberry topping, cook blueberries with honey and cornstarch until thickened. Once the tart has cooled slightly, pour the blueberry mixture on top.
