  • 6 egg whites
  • 1 Β½ cups granulated sugar
  • 1 Β½ cups unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 tablespoons blackberry reduction
  • 12 ounces fresh blackberries
  • edible flowers (micro pepper, alyssum and micro mint) washed and dried

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and prepare three greased 8-inch round cake pans lined with parchment paper.
  2. Combine flour, baking powder, baking soda, and salt in one bowl. In another, mix milk, lime juice, and lime zest.
  3. Cream butter and sugar until fluffy; add eggs one at a time followed by vanilla extract.
  4. Alternate adding dry ingredients and milk mixture until just combined.
  5. Divide batter among pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely on a rack.
  6. For the blackberry buttercream, cook blackberries with sugar and lime juice until syrupy, then blend and strain if desired. Whip egg whites and gradually mix in sugar until stiff peaks form; cream butter separately and combine with blackberry reduction.
  7. Assemble layers with frosting in between and decorate with remaining buttercream, fresh blackberries, and edible flowers.
