  • ⅓ cup dried porcini mushrooms
  • 1 cup boiling water
  • 6 strips Turkey (diced)
  • 1 lb beef (loin or shoulder, fat removed, cubed)
  • 2 medium onions (diced)
  • 1 small white cabbage (cored and shredded)
  • 6 cups sauerkraut (drained)
  • 10 prunes (halved)
  • 2 tbsp tomato paste
  • 3 bay leaves
  • 1 tbsp caraway seeds
  • ½ tsp allspice
  • 2 cups beef broth
  • 1 cup beef stock (low sodium)
  • Salt and pepper to season

Instructions

  1. Soak dried mushrooms in boiling water for 15 minutes.
  2. In a large saucepan, cook diced turkey until crisp.
  3. Add kielbasa and kabanos sausages; brown for about 10 minutes.
  4. Brown cubed beef in the same pan until golden; transfer to the slow cooker.
  5. Sauté onions and cabbage until soft; add to the slow cooker.
  6. Stir in soaked mushrooms, sauerkraut, prunes, tomato paste, and broth.
  7. Cook on LOW for 8–10 hours or overnight.
