Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Slowly combine with dry ingredients until just mixed.
  4. In another bowl, beat cream cheese until smooth. Add sugar, egg yolk, and vanilla; mix until combined.
  5. Fill muffin cups about ¾ full with batter. Top each with cream cheese mixture and gently swirl using a toothpick.
