  • 1 can (15 oz) diced tomatoes (fire-roasted if possible)
  • 2 cups beef broth (low-sodium preferred)
  • 1 can (15 oz) red kidney beans, drained & rinsed
  • 1 can (15 oz) black beans, drained & rinsed

Instructions

  1. Heat olive oil in a large pot over medium heat. Sautรฉ diced onion for 3โ€“4 minutes until soft.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Incorporate ground beef; break it up and cook until browned (5โ€“7 minutes). Drain excess fat if necessary.
  4. Stir in chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Cook for 1 minute to bloom spices.
  5. Mix in tomato paste and cook for another minute before adding diced tomatoes and beef broth; stir well.
  6. Add drained beans to the mixture. Simmer uncovered for 30โ€“40 minutes, stirring occasionally until thickened.
