Ingredients
- 3 cups cooked orzo

- 2 tbsp balsamic vinegar
- 2 tsp dijon mustard

- Extra sea salt, to taste
Instructions
- Preheat your oven to 400ยฐF (200ยฐC) and spray a baking sheet with avocado oil.
- Spread the diced butternut squash and sliced red onion on the sheet, sprinkle with salt, and roast for about 20 minutes until tender.
- While the vegetables roast, bring a large pot of salted water to boil and cook the orzo according to package instructions until al dente. Drain and set aside.
- In a mixing bowl, whisk together balsamic vinegar, olive oil, dijon mustard, pure maple syrup, garlic powder, water, and additional salt.
- In a large bowl, combine the cooked orzo with roasted vegetables and shaved brussels sprouts. Drizzle with dressing and toss gently. Top with crumbled goat cheese before serving.
