  • Β½ cup canola oil
  • Β½ cup milk
  • Β½ cup caster sugar
  • Β½ cup brown sugar

  • Β½ teaspoon salt

Instructions

  1. Preheat your oven to 160Β°C (320Β°F) for fan/convection or 180Β°C (355Β°F) for standard. Grease and line a loaf tin with baking paper.
  2. In a mixing bowl, mash the overripe bananas. Add the canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.
  3. Sift in the flour, baking powder, and salt into the mixture. Stir gently until just combined; some lumps are okay.
  4. Pour the batter into the prepared tin and bake for 45–55 minutes or until golden brown and a skewer inserted comes out clean.
