  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350Β°F (180Β°C) and prepare a 9 x 4 inch baking tin by greasing it and lining with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a separate bowl, cream the butter and sugar using an electric mixer until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually fold half of the dry ingredients into the wet mixture, followed by the buttermilk. Add remaining dry ingredients and mix gently until just combined.
  5. In another bowl, toss diced apples with brown sugar and additional cinnamon.
  6. Layer half of the batter into the prepared tin, sprinkle half of the apple mixture on top, then swirl gently. Repeat with remaining batter and apples.
  7. Bake for 55–65 minutes or until a toothpick inserted comes out clean. Allow cooling before slicing.
