  • 1/3 cup granulated sugar
  • ½ cup brown sugar

  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • ¼ teaspoon coarse kosher salt (if using fine sea salt use half by volume)
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a 9” square baking dish and line it with parchment paper.
  2. In a large sauté pan, boil the apple cider until reduced by half (about 5 minutes). Measure out ¾ cup and whisk in the diced butter.
  3. In a medium bowl, whisk together eggs, granulated sugar, brown sugar, olive oil, and sour cream until smooth.
  4. Mix in baking powder, baking soda, ground cinnamon, allspice, and salt.
  5. Gradually whisk the reduced cider into the mixture before folding in flour until just combined.
  6. Pour the batter into the prepared baking dish and bake for 22–25 minutes or until golden brown.
  7. Let cool on a rack for about 5 minutes before brushing melted butter on top and sprinkling with cinnamon sugar.
